This is the BEST Vegan Fried Chicken Sandwich! We’re giving it the KFC treatment with 11 not-so-secret herbs and spices and popping those well-seasoned extra crispy patties between toasted buns with fresh juicy tomato, crisp lettuce and creamy vegan mayo. Because we can. And because we want to.
With this version of “The Best Vegan Fried Chicken,” I went with easier to find ingredients. So you can use all-purpose flour if you like and instead of using VeganEgg, you can use chickpea flour.
A while ago a list of herbs and spices leaked online and was supposedly the original Kentucky Fried Chicken blend. There’s some controversy about it and KFC officially says it’s not even close. But I used that list and tweaked it with a bit of added sugar and changed some of the proportions to what I think KFC tastes like. It’s been a decade or more since had original recipe KFC, but I’m pretty sure I nailed it. At least, it tastes flipping bomb.

350g (12oz) block of medium firm (2x frozen & thawed) OR firm tofu (1x frozen & thawed)
1/4 cup double strength vegan “chicken” broth
1/2 cup all-purpose flour (regular or gluten-free)
1 tablespoon nutritional yeast
1 tablespoon paprika
1 teaspoon black pepper
1 teaspoon white pepper
1 teaspoon celery salt
1 teaspoon salt
1 teaspoon ground mustard
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sugar
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon ginger powder
1/2 cup organic rice crispies*
Wet Wash (see notes for alternatives):
1/2 cup water
1/2 cup chickpea flour
Other Sandwich Ingredients:
2 sliced buns (I used ciabatta)
vegan mayo (eg aquafaba mayo)
2 slices vegan cheese (I used Herb & Garlic Chao Slices)
Oil for frying
Vegan chicken broth differs from regular vegetable broth as the flavour is formulated to be similiar to chicken broth. Commercial brands include Better Than Bouillon No-Chicken Broth, Edwards & Sons Not-Chick’n Bouillon Cubes, Orrington Farms Vegan Chicken Flavoured Broth Base & Seasoning, and more. You can also try my DIY VEgan Chicken Broth powder.
To make double strength broth, simply add double the amount of powder/paste as called for per volume of water. For example, if a brand calls for 1 teaspoon of powder per cup of water, use 1/2 teaspoon of powder for 1/4 cup of water.
For gluten-free, make sure to use gluten-free flour, gluten-free vegan chicken-style broth/bouillon, and gluten-free buns. All other ingredients should be normally free from gluten but, of course, read labels to be sure.
Superior Tofu, T&T brand, and Sunrise Tofu (medium firm) have been tested and all create the coveted layered chicken-like texture. House Brand in medium sometimes works but sometimes the texture is more sponge-like. Some viewers report that House brand in soft works.
Other types of medium tofu tested have not yielded the same layered texture but still work well. The texture resembles the look of a sponge more but will still press nicely which is actually the key in this recipe. Water out, flavour in!
