One Pot Vegan Mac and Cheese

I only recommend items I use for myself and my family ? * It seems that I have been on a bit of a one pot meal kick lately.. I promise I am not super lazy (ok maybe a little), however what I definitely am is BUSY. I am sure you get it – kids, work, school, house, extracurriculars. So, if I can find a way to free up some time while still maintaining a certain level of meal quality, am I going to go for it. And then do it over and over. Mac and Cheese is such a classic comfort food and perfect at the end of a long day. We don’t use the boxed stuff so it is always made from scratch. I do enjoying using cashew based cheeses, but was wanting to come up with something a tad lighter. This one pot vegan Mac and cheese is still just as rich and creamy without the cashew sauce! For the yummy cheesey flavour, we are using a combination of white miso paste, nutritional yeast (surprise, surprise), yellow mustard, and also white vinegar for a little sharpness. To add a bit of extra richness there is a small amount of vegan butter in the ingredients, this is optional though (I very much prefer it with). Turmeric provides the traditional yellowish colour and doesn’t alter the taste at all. If you don’t have any don’t worry about it! You can make it without, it won’t have the same colour but it will still taste delish. For good measure there are some diced cherry tomatoes tossed in. I don’t know about you but I adore tomato on my grilled cheese and the combo goes nicely here too. Finally, to round everything out, this vegan Mac and cheese is topped with some of my Maple Tempeh Bacon Crumbles. I usually like to make a batch of them ahead of time to use in various recipes throughout the week. You can mix them right into the pot with everything towards the end of cooking if you prefer. One Pot Vegan Mac and Cheese This One Pot Vegan Mac and Cheese is loaded with flavour and comes together in only 30 minutes! 2 1/4 cup almond milk, unsweetened 1/2 cup water 1/4 cup nutritional yeast 2 tbsp white miso paste 1 tbsp vegan butter 1/2 tbsp yellow mustard 2 tsp white vinegar 1 tsp onion powder 1/4 tsp turmeric 1 1/4 cup elbow macaroni 1/2 cup cherry tomatoes, diced Add all ingredients except pasta and tomatoes to a skillet; bring to a boil. Once boiling, add pasta and stir; reduce heat to just below medium. Let simmer, making sure to stir often to prevent sticking. When pasta is just about tender, stir in tomatoes. Continue to cook another few minutes. When noodles are fully cooked remove skillet from heat. Serve with desired toppings + enjoy! – I use whole grain pasta for mine.
